Breakfast/dinner ideas (african style)

Today’s write-up was inspired by one one of my doctors during my internal medicine/infectious disease handover.

During her presentation, while trying to bring her presentation to a close, she had a part in her presentation that had a picture of food at the end of her presentation from which she made a comment, she said “food is not just a way of life but it has alot of emotions attached to” what that simply means is that food has lots of therapeutic benefits attached to it. People who smoke or drink find solace in drinking or smoking when they are stressed or emotionally down. Well that is what gives them peace and calmness in the spirit, well, so they thought ( but unknowingly to them they are causing more harm than good to their liver and lungs👀).

Everyone have that particular food that they like to eat when they are stressed depressed or sad.😋 Well, you can call those of us who use it as ‘comfort foodies’ who cares?😉 Its much better than starvation or not having food at all we like it like that, that’s how we roll😃

For me, my go-to-favourite is ice cream(which is equally not good which can cause diabetes but who cares if I finally get relieved from stress). I got myself a cup of  ice cream from Brusters of recent after being in the infectious disease ward…God knows how uncomfortable I was on my first day I had to be looking for where I could get vaccinated (not that I’m not covered, I am but my subconscious mind won’t let me rest).  I felt like getting, so after all the stress my mind put me through on my way home, I had to just get my mind at rest by giving it a chilled chocolate ice cream.🍧🍨🍦(brusters is always on the rescue).

So before i digress from  today’s topic, I will be giving  you some tips on how to prepare moi moi with a bit of a twist. (Nigerians most cherished food)

Ingredients:

Blackeye beans/washed and peeled

Fish seasoning

Black pepper

Garlic powder

Thyme

Curry powder

Rosemary🌿

4 cubes of maggi

Bell pepper

Sweet pepper

Scotch bonett

Onions

Fresh tomatoes🍅

Sliced letuce(for a special taste)🍀

Fish/ turkey (optional)

Blended beans

Salt

Creyfish

Containers for baking/ cooking and storage.

After blending mix ur spices together in a plate, then pour into ur blended beans and mix together. Add the fish and turkey to your mixture and there you have it….

Some people might ask why I added chopped pepper in, why the answer is simple…moi moi is too plain for me I to chew things while eating my food.

And I added letuce just to give it a local flavor (Yo know the wrapped moi moi in leaves ).😇

Moi moi is bae. 💏Ready for the oven…but you can add little water in your pot and place your product in it and close you pot tightly no escape of air and boil.
